Delicious Muffins!



200g (7oz) Self Raising Flour,

75g (3oz) Porridge Oats,
7.5ml (1 and a half tsp) Baking Powder,
50g (2oz) Soft Brown Sugar,
225ml (8fl oz) Milk,

60ml (4tbsp) Sunflower Oil,
5ml (1tsp) Vanilla Essence,
1 Medium Egg,
Any Topping.

1. In a large mixing bowl, mix together the flour, oats, baking powder and the soft brown sugar until it is all combined.
2. In another bowl, mix together the milk, oil, vanilla essence and an egg until smooth.
3. Pour the wet ingredients into the dry ingredients and mix slowly until thick and combined. You could add any toppings you like at this point, like Chocolate Chips or Hazelnuts. (Try Butterscotch Chips!)
4. Fill muffin cases with the muffin batter and bake at 200 degree Celsius for around 18-20 minutes or until golden brown.
5. Serve muffins warm and enjoy!
