Delicious Glutinous Rice Balls! (Lo Mai Chi/糯米糍)
This is perfect snack or even a dessert at the end of a Heavy meal! This is not too sweet and is perfect for anyone! :)
Ingredients;
450ml of Coconut Milk,
450ml of Water,
6 Tbsp of Sugar,
455g of Glutinous Rice Flour,
A bit of Oil
STRAWBERRY FILLING;
1/2 Cup of Strawberries,
2 Tbsp of Sugar
CHOCOLATE FILLING;
2 Tbsp of Chocolate Spread,
1 Tbsp of Nuts.
1. Boil the Coconut Milk, Water and Sugar until it starts to boil on Mediun-Low heat and then set aside to cool.
2. Pour the Glutinous Rice Flour into a Large bowl and Pour in the Coconut Milk mixture and stir until a soft dough forms.
3. Use a little bit of oil and brush it into a Large steaming pan evenly.
4. Put the dough into the steaming pan and spread evenly with a spatula.
5. In a large pan, place a steaming rack and fill the pan up with water. Let the water heat up gradually, and place the dough on top of the steaming rack and then cover the pan. During the steaming process, a lot of the water would have evaporated, so gently fill it back up with water!
6. After about an hour, pour all the excess water out and place the steaming pan on top of ice cubes to cool down. To help it cool down faster, fold the dough with a spatula to cool evenly.
7. Once cooled, place the dough on a kneading mat knead for 30 seconds. Then, using a bench scraper, shape the dough evenly. (Bite sized pieces!)
8. Flatten the dough in the palm of your hand and place the filling of your choice! Do not put too much filling in other wise it will break or burst!
9. Roll in Coconut and refrigerate for at least 2 hours. Once refrigerated, serve and enjoy!
