Bakery-style Chocolate Chip Muffins | Recipe

Chocolate Chip Muffins | Recipe
INGREDIENTS:
1 egg,
125ml of milk,
55g of unsalted butter, melted,
1 tsp of vanilla extract,
155g of plain flour,
70g of sugar,
1/2 tsp of baking soda,
1/2 tbsp of baking powder,
100g of chocolate chips

METHOD
1. In a large bowl, mix together the egg, milk, butter and vanilla extract.
2. Add in the flour, sugar, baking powder and baking soda. Mix until just combined. Don't over-mix as the muffins will end up tough. The batter should remain slightly lumpy.
3. Fold in the chocolate chips. Hint- coat the chocolate chips in a little bit of the flour used to prevent them from sinking all to the bottom.
4. Divide the batter and scoop into 6 muffin cases.
5. Bake at 210c for 5 minutes and then at 180c for 12-15 minutes.
6. Serve warm or let cool completely.
