Red Bean Pudding 砵仔糕 | Recipe
Sweet red beans in a soft traditional pudding. This delicious dish is sure to impress. Try it out if you have not already!

INGREDIENTS;
80g of Plain Rice Flour (not Glutinous),
100ml of Water,
22g of Corn Starch,
350ml of Water,
100g of Brown Cane Sugar,
3 Cups of Red Adzuki Beans,
5 Cups of Water,
1 and 1/2 Cups of Sugar.
Before making this recipe, soak 3 cups of Adzuki red beans in 5 cups of Water overnight to soften.
The next morning, boil red beans with 6 cups of Water and 1 and 1/2 cups of Sugar for about 3-5 hours until they are soft.
1. In a large mixing bowl, whisk together the Plain Rice Flour (not Glutinous*), Water and Corn Starch until a smooth batter is formed. Set aside.
2. Boil the 350ml of Water and Brown Cane Sugar in a large sauce pan until the sugar dissolves to make a syrup.
3. Slowly pour the syrup into the flour mixture while whisking continuously.
4. Pour the complete batter into a measuring jug. Fill a steamer/rice cooker 3/4 way full with hot water.
5. Place ramekins into a steaming basket or rack and pour the batter halfway evenly into each ramekin.
6. Scoop 3 tablespoons of red bean into each batter-filled ramekin. Please the steaming basket on top of the steamer and cover with a lid to steam. Steam for 1-3 hours until they are fully cooked and set.
Let them cool before serving. Enjoy each pudding with a skewer for a more traditional look to share with family and friends.
