CHURROS FROM SCRATCH (Baked, Easy) | Recipe


Baked Churros | Recipe
38g of unsalted butter,
1 tbs sugar,
1/2 cup of water,
60g of flour,
1 egg (beaten),
1 tsp vanilla extract

1/4 cup of sugar,
1 tsp of cinnamon,
Nutella

Method
1. In a large pot, melt the butter, sugar and water together on low to medium heat.
2. Once melted, remove from heat and stir in the flour until a dough forms.
3. Place dough in a large bowl and then let cool.
4. Mix in the whisked egg and vanilla extract until a thick paste forms.
5. Transfer this dough into a large piping bag fitted with a star piping tip.
6. Pipe straight lines on a lined baking sheet with even pressure- cut off the end with a knife (watch video).
7. Spray the piped dough lightly with cooking oil.
8. Bake at 220c for 10-12 minutes and then broil carefully until golden brown- watch very carefully as they could burn in a matter of seconds.
9. Once baked, let the churros cool very slightly.
10. In a shallow plate, mix together the sugar and cinnamon. Take the churros and roll them in this sugar whilst still warm.
11. Serve with warmed up Nutella either on the side or by drizzling it on top.

Chocolate Mousse Cake | Recipe





Who doesn't love chocolate? This cake takes it to another level- it has three forms of chocolate (chocolate cake, chocolate mousse and chocolate ganache all combined) and it's so easy to make! The soft and moist chocolate cake compliments the airy mousse well, along with the ganache that adds depth to this recipe. This cake is so delicious that I may or may not have eaten half of it already (oops!) Give this recipe a go and let me know how it turns out.

Chocolate Mousse Cake Recipe                                                                                   Recipe by iSaamuel 
INGREDIENTS;
Cake
3/4 cup of all purpose flour,
3/4 cup of sugar,
3/4 cup of cocoa powder,
1 teaspoon of baking soda,
1 teaspoon of baking powder,
1 cup of milk,
1/2 cup of vegetable oil,
1 egg,
1 cup of hot water

Chocolate mousse
100g of semi-sweet chocolate,
250ml of heavy whipping cream,
2 egg whites

Ganache
50g of dark chocolate,
150ml of heavy cream

METHOD;
Cake
1. In a large bowl, sift the flour cocoa powder, baking soda and baking powder. Add in the sugar and whisk well.
2. Make a well in the centre of the dry ingredient with a spatula and add in the egg, milk and oil.
3. Whisk together briefly. Add in the hot water and stir with a spatula until a thin batter is formed.
Tip: Adding the hot water thins out the batter creating a moist cake with a tender crumb.
4. Pour batter into two 7 inch cake pans lined with parchment paper.
5. Bake at 180c for 20-15 minutes or until a toothpick inserted into the center of each cake comes out clean.
Let the cakes cool thoroughly before decorating.

Mousse
1. Chop the semi-sweet chocolate with a knife, into small pieces.
2. Heat the cream until it simmers on medium low flame. Do not boil.
3. Pour the cream on top of the chocolate and leave this for 5 minutes without stirring.
4. Stir with a whisk after 5 minutes until no lumps of chocolate remain, and you'll be left with a smooth ganache.
5. Transfer into a large bowl. Using a mixer, whisk until soft peaks are formed.
6. After, gently heat up the egg whites using a water bath while whisking constantly to ensure it doesn't cook.
7. Whisk the egg whites until soft peaks are formed. Fold this into the chocolate/cream mixture until no streaks of egg whites remain.

Ganache
1. Repeat steps 1-4 as above for the mousse.

Assembly
1. Place half of the mousse on top of the first layer of cake. Spread evenly.
2. Place the second cake on top and place the rest of the mousse on top of that,
3. Spread evenly, decorate with whipped cream and pour the ganache as desired.

Birthday Vanilla Cupcakes | Recipe



These cupcakes are absolutely perfect for any birthday party. They may look normal on the outside, but inside, they are filled with a creamy, vanilla custard waiting to be oozed out and suprised by anyone. Topped off with whipped cream, feel free to decorate them your way!

Birthday Vanilla Cupcakes Recipe                                                                       Recipe by iSaamuel

INGREDIENTS;
45g of Bread Flour,
3 Egg Yolks,
2 Teaspoons of Pure Vanilla Extract,
3 Tablespoons of Vegetable Oil,
2 Tablespoons of Milk,
45g of Sugar,
The seeds from 1 Vanilla Bean/Pod,

3 Egg Whites,
1 Teaspoon of Cream of Tartar,

- Custard*
 3 Egg Yolks,
 The seeds from 1 Vanilla Bean/Pod,
 1 Tbsp of Vanilla Extract,
 1/2 Cup of Sugar,
 1 Tbsp of Cornstarch,
 3 Cups of Fresh Milk

- Whipped Cream**
  3/4 Cup of Heavy Whipping Cream,
  2 Tablespoons of Sugar

Vanilla Cupcakes
1. In a large mixing bowl, whisk together the Bread Flour, Egg Yolks, Vanilla Extract, Oil, Milk and Sugar until pale, thick and creamy.
2. Add in the seeds from the Vanilla Pod and whisk well until the seeds are evenly visible and distributed through the batter.
3. In another large bowl, whisk Egg Whites and Cream of Tartar until stiff peaks are formed and Egg Whites are glossy. When the bowl is tipped, the Egg Whites should not fall out or move. If it moves, whisk longer until it does not move at all.
4. Fold the Egg Whites, with a rubber spatula, into the Egg Yolk batter, gently and gradually., until a complete batter is formed. Be gentle and don't whisk vigorously otherwise you will lose the air beaten for the Egg Whites, resulting in an unfavorable texture (chewy).
5. Divide batter equally into a lined cupcake pan. Bake at 180C for 15-25 minutes or until a toothpick or a skewer is clean when inserted into the centre of a cupcake.
6. Let the cupcakes cool before decorating.

Custard*
1. Whisk egg yolks and sugar in a large bowl for 5-8 minutes until the mixture is pale and thick.
2. Heat up the milk in a large saucepan on medium-high heat, along with, vanilla beans, and the used vanilla pod, until it just comes to a boil. Take 3 tablespoons of the milk and mix with the constarch to create a slurry. 
3. Remove the vanilla pod. Pour the hot milk over the egg yolks while whisking constantly. When completely mixed in, return to the pan. Pour in your cornstarch slurry.
4. Stir over a low heat until the mixture thickens enough to coat the back of a spoon. This will take about 5-6 minutes.
5. Once completed, sieve the custard with a strainer into a large bowl in case of any cooked or curdled eggs.
6. Stir in your vanilla extract well. It's now done!

Whipped Cream**
1. Whip the cream with the sugar until soft peaks form. Don't over mix or it could turn into butter and seperate. You could also add vanilla extract!

Decorating the Cupcakes
1. Place the Custard and Cream into two seperate piping bags fitted with star piping tips.
2. Poke a hole into the center of each cupcakes and slowly pipe in the custard until the cupcake feels 'full'. Scrape of and remove any excess custard on top.
3. Pipe the Whipped Cream on the cupcakes. Decorate with colorful edible sprinkles, Oreos, or even fruits. It's up to you. Be as creative as you like- enjoy!

Red Bean Pudding 砵仔糕 | Recipe




Sweet red beans in a soft traditional pudding. This delicious dish is sure to impress. Try it out if you have not already!

Red Bean Pudding Recipe                                                                                     Recipe by iSaamuel 

INGREDIENTS;

80g of Plain Rice Flour (not Glutinous),
100ml of Water,
22g of Corn Starch,

350ml of Water,
100g of Brown Cane Sugar,

3 Cups of Red Adzuki Beans,
5 Cups of Water,
1 and 1/2 Cups of Sugar.

Before making this recipe, soak 3 cups of Adzuki red beans in 5 cups of Water overnight to soften.
The next morning, boil red beans with 6 cups of Water and 1 and 1/2 cups of Sugar for about 3-5 hours until they are soft.

1. In a large mixing bowl, whisk together the Plain Rice Flour (not Glutinous*), Water and Corn Starch until a smooth batter is formed. Set aside.
2. Boil the 350ml of Water and Brown Cane Sugar in a large sauce pan until the sugar dissolves to make a syrup.
3. Slowly pour the syrup into the flour mixture while whisking continuously.
4. Pour the complete batter into a measuring jug. Fill a steamer/rice cooker 3/4 way full with hot water.
5. Place ramekins into a steaming basket or rack and pour the batter halfway evenly into each ramekin.
6. Scoop 3 tablespoons of red bean into each batter-filled ramekin. Please the steaming basket on top of the steamer and cover with a lid to steam. Steam for 1-3 hours until they are fully cooked and set.

Let them cool before serving. Enjoy each pudding with a skewer for a more traditional look to share with family and friends.

Vanilla Cupcakes Recipe

It seems that nowadays cupcakes are the next big thing, but I find that the ones from many bakeries are too sweet... The icing is packed full of powdered sugar, not to mention that the actual cake itself is loaded with a ton of butter and sugar, as if it wasn't sweet enough. Many cupcakes now come in endless varieties of flavors which then has a load of artificial flavor and coloring added- yuck!
I have come up with a recipe, that is much healthier and delicious, as I have cut down on the butter and sugar, and I also find that it has a softer texture than most cupcake recipes out there! I hope you enjoy me recipe!

Vanilla Cupcake Recipe                                                                                         Recipe by iSaamuel

INGREDIENTS;
2 Eggs,
1/2 Cup of Sugar,
1 Tbsp of Pure Vanilla Extract,
2 Tbsps of Melted Butter,
1/2 Cup of Fresh Milk,
1/2 Cup of Cake Flour.

1. In a large mixing bowl, whisk together the Eggs and the Sugar until the mixture doubles in volume and becomes thick and creamy. This step takes about 5-10 minutes to reach its maximum volume and texture!
2. Gradually sift in your Cake Flour and whisk gently to incorporate everything. Do not overmix otherwise you'll have tough bread-like cupcakes!
3. In another bowl, whisk Melted Butter along with Milk and Vanilla Extract and pour this mixture into your cake batter.
4. Stir gently until everything's combined but don't mix for too long as the cake batter will develop gluten! The cake batter should be at a nice and creamy consistency!
5. Line your Cupcake Pan with Cupcake liners and scoop the batter with an Ice-Cream scoop or with two spoons, and divide the mixture equally between the liners.
6. Bake at 180c for about 15-25 minutes or until a toothpick comes out clean when inserted into the center of a cupcake.

Enjoy and serve with your favorite icing or a dollop of whipped cream! :)


Sponge Cake Recipe





























I've always wanted the perfect recipe for moist and soft cake... here it is! After weeks of developing and testing, I have finally come up with this perfect recipe! I love using this for my Birthday Cakes, or just sharing with friends and family beneath a blanket of fluffy whipped cream for a simple decoration- I hope you like this recipe

INGREDIENTS; 
6 Egg Yolks,
6 Egg Whites,
150g of Sugar,
1 Tbsp of Vanilla Extract,
9 Tbsps of Milk,
110g of Cake Flour,
60g of Butter (Melted).

1. In a large mixing bowl, whisk together the Egg Yolks, Sugar, Vanilla until the mixture is light, thick and fluffy. The longer you mix, more air will be incorporated into the final result, making the cake extra soft!
2.  Add in your Milk and Melted Butter and whisk gently until well incorporated. The mixture should still be slightly thick.
3. Sift your Cake Flour into the Egg Yolk mixture, in three portions, mixing gently after a each addition with a whisk to prevent any flour lumps. Do not overmix, other wise you'll have a very dense and tough cake! Once all of the Flour are incorporated and well mixed through, scrape down the side of the bowl with a spatula.
4. Your mixture should be nice and creamy but not too thick or dough-like.
5. Add your Egg Whites in a seperate large mixing bowl and beat until stiff peaks are formed for about 3-7 minutes.
6. Gradually add your Egg Whites into your Egg Yolk mixture while folding gently to keep the air in.
7. Once there is no Egg White left, line two 10inch cake pans with non-stick parchment paper and divide the mixture evenly between the two pans. Bake the cakes for 20-25 minutes at 200c. Be careful not to overbake as it will result in denser cakes.

Let your cakes cool and frost with icing to make a Birthday Cake or top off with Whipped Cream and Fruits for an elegant dessert! Enjoy.

Sweet Crêpes!

  
INGREDIENTS;                                                                                                       Recipe by iSaamuel
1 Egg,
1/2 Cup of Milk,
1/2 Cup of Plain Flour,
2 Tbsps of Sugar,
2 Tbsps of Butter (Melted),
1 Tsp of Vanilla Extract (Optional.) 

Make the Crêpes savory, by omitting the sugar and adding a 1/2 tsp of Salt to the batter! Serve with Grated Parmesan Cheese and Ham, sprinkled on with freshly ground black pepper to make the best breakfast ever! ^___^

1- In a large bowl, whisk together the Melted Butter, Egg, Vanilla Extract and Sugar together until everything's well combined.
2- Add the Flour in a few additions while whisking vigorously to prevent a lumpy batter.
3- Heat the pan on medium-low heat and use a ladle to scoop the batter on to the pan.
4- Swirl the pan until the batter is distributed evenly and is in a circle. Once the crepe is filled with air, it is ready to flip. When the crepe is flipped, place it on a plate to let cool down.
5- Repeat Step 3 and Step 4 until there is no crepe batter remaining and all the crepes have been cooked.
6. When all the crepes have cooled down, decorate them with some whipped cream and fresh fruits- yum! Be creative and sprinkle them with Powdered Sugar for an elegant look and a hint of sweetness.


This is when the Crêpe is ready flip!
